I find that microwave cooking is very easy, mess-free way to cook certain dishes. Till now most of the people thought that microwave is not suitable for Indian cooking. What Is Soya Chunks or Soya Granules

Soya chunks are textured vegetable protein (TVP). Also known as textured soy protein (TSP) it is a good vegetarian protein option. It is a defatted soy flour by-product of extracting soybean oil from soya bean.

How Can you Use Soy Chunks or Granules

Soy chunks are easy and quick to cook. You can add them as a meat replacement in most of the recipes. It is a rich protein option for vegetarians however soya granules are not Keto because they contain a significant amount of carbs as well. You can use soya chunks or granules in making soya chunks curry, or add them in various pulao, stir-fries. You can also make Soya chunks cutlets. Basically, any recipe where you use keema/minced meat can be made for vegetarians or vegans with soya. Coming back to Soya granules bhurji, it is a spicy scrambled soya bean chunks. Some people prefer to call it soya granules keema. I prefer to call it bhurji as this has slightly dry texture like Indian dry scrambles. Keema curry, in my opinion, has a semi-solid creamy consistency. I make that recipe differently.

Ingredients you Need

You need very few ingredients for making soy bhurji. Soya granules/nutrela granules Vegetables - Onion, tomatoes, bell peppers or/and Peas Olive oil Basic spices and herbs - cumin seeds, salt, red chilli, turmeric powder, garam masala, ginger, green chillies. Garnishes - Coriander, lime juice, pomegranate

How to Make Soya Bhurji

Soak soya granules in salted hot water.

For cooking it in the microwave, First I make a tempering of cumin seeds with ginger and green chillies. [photos 1,2,3,4]  For exact steps check out the recipe card below.

Next step is making a basic onion tomato and a capsicum masala. For that In the same bowl, I add in veggies, salt to taste, red chilli, garam masala powder and cook them. [photos 1,2,3] Finally, I add in the soya granules which I already soaked in salted hot water and Finish cooking cycle and your delicious soya bhurji is ready. [photos 1,2,3]

Recipe Notes and Tips

Soak soya in salted water to avoid bland tasting sabji. You can make the same recipe without a microwave. To make it heart-healthy I used olive oil. You can use any unrefined oil of your choice or even ghee. If you do not have coloured bell peppers/capsicum you can use a single colour of capsicum. It will not affect the taste. But the colour of the sabji can change depending upon which coloured bell peppers you are using.
