And of course, I still had to find a way to switch up the classic recipe just a bit. I used plant-based butter and skipped an egg (which some recipes call for, but I didn’t find it necessary) to make this dish vegan. I hate how with some stuffing recipes the bread ends up getting super soggy – but not this one! The sourdough bread adds amazing texture and the combo of fresh herbs and sautéed veggies add so much flavor. I can’t wait for you to try this one!

Main entree: Serve this stuffing alongside a hearty main like my lentil loaf for a plant-based option or air fryer turkey breast if you’re craving something more traditional. Other sides: Round out the meal with some comforting sides like healthy sweet potato casserole, healthy green bean casserole, or healthy mashed potatoes for a lighter twist on holiday classics. Salads: Add a pop of color and freshness with a seasonal salad like my butternut squash salad or brussels sprout and kale salad—perfect for balancing out the richness of the other dishes. Vegetables: Roasted veggies are always a hit! Try cinnamon maple kabocha squash, apple cider vinegar brussels sprouts, or roasted root vegetables for a flavorful and nutritious addition. Desserts: For a sweet ending, go with a classic healthy pumpkin pie or sweet potato pie, or mix it up with pecan pie brownies, apple crisp, or cherry crisp to satisfy every dessert craving. Drinks: Keep the festivities going with a cozy glass of mulled wine or apple cider mimosas—both perfect for celebrating the season!
