Why You’ll Love This Skinny Mojito Recipe

It’s super light and refreshing!  It will make you feel like you’re sitting on a beach somewhere or will bring you back to a hot summer day.It requires just a few simple ingredients. The end result looks like a fancy cocktail but it will take you less than 2 minutes to make!

Here’s What You Need

lime – you’ll need the full lime for this drink! Fresh lime juice is mixed into the drink and a lime wedge is the perfect garnish. fresh mint – can’t have a mojito without mint! Look for mint that is bright green and crisp – avoid wilted or discolored leaves. white rum – mojitos are typically made with light or white rums. You can use a flavored rum or just stick to plain!lemon-lime zero calorie soda – Zevia or lemon/lime sparkling water (lime Spindrift would work great). You could also use club soda or soda water but I like the extra flavor of lemon-lime soda!sweetener – this is optional, but you can add a dash of liquid sweetener like maple syrup, agave or stevia to balance out the tartness of the lime juice. I love tart drinks so didn’t feel the added sweetness was necessary.

What Kind of Rum Should I Use?

A classic mojito recipe is made with white rum and that’s what I recommend! I wouldn’t use a super cheap rum as there aren’t too many other ingredients to “cover” up that flavor – go with a high quality! I typically buy Bacardi Captain Morgan white rum.

Variations

Want to switch up your mojito? The options are endless! Muddle in extra fruit with the mint and lime juice. Here are some flavor ideas:

How to Make a Skinny Mojito

Add the fresh mint leaves and freshly squeezed lime juice to a glass and muddle them together using the back of a spoon or a muddler. This essentially just means, smashing them together and breaking down the mint leaves a bit! Add the rum to the glass and fill the glass with ice. Top with the soda or sparkling water and stir to combine. Garnish with fresh mint and a lime wedge and enjoy!

Make it a Mocktail

This drink is delicious without the alcohol! Muddle the mint and lime juice together as directed and then fill the glass with ice. Top with soda or sparkling water and stir. Taste and add a little liquid sweetener if necessary. Serve with a sprig of mint and a lime wedge and enjoy!

What to Serve Mojitos With

The first thing that came to mind was my Caribbean jerk shrimp bowls! They are loaded with flavor that would pair perfectly with this refreshing cocktail. In general, seafood is a great pairing option. Here are more ideas:
