Whether or not you’ve tried one of my classic baked oatmeal recipes, I know you’re going to love this single serve version! Here’s why:

Easy to prep – it’s so simple to prep. Just mix all of the ingredients and bake! Minimal clean up – yep, everything is mixed in one bowl and then baked in another… just two dishes to clean! Single serving – don’t worry about having leftovers for the week and just make what you’re craving NOW! Healthy and filling – this single serve baked oatmeal is packed with fiber. You can add protein powder to make it even more satisfying.

What if I Need More Than 1 Serving?

You’re in luck! I have a whole library of baked oatmeal recipes that make 6 servings with each batch. These are great if you want to bake once and eat healthy all week long! The recipes are super similar, just for a larger portion.

Flavor Variations

Strawberry Chocolate Chip Baked Oatmeal

Add in 2 tablespoons of mashed bananas, 2 tablespoons of chopped strawberries and 1 tablespoon of chocolate chips before baking. Top with chopped strawberries, banana slices and/or maple syrup!

Apple Cinnamon Baked Oatmeal

Add in 2 tablespoons of applesauce and 2 tablespoons of chopped apples before baking. Top with extra apple chunks, a drizzle of maple syrup and/or a drizzle of nut butter!

Blueberry Baked Oatmeal

Add in 2 tablespoons of vanilla protein powder, 1 tablespoon of almond butter and 2 tablespoons of blueberries. Top with extra blueberries!

Banana Baked Oatmeal

Add in 2 tablespoons of mashed bananas, 2 tablespoons of chopped walnuts and 2 tablespoons of vanilla protein powder before baking. Top with additional banana slices and enjoy!

Can I Add Protein Powder?

Yes! The blueberry and banana variations already include protein powder but you can add 2 tablespoons to any of these recipes without adding extra liquid. I love adding protein to make this a more filling and satisfying breakfast.

How to Serve Baked Oatmeal

I love eating baked oatmeal on it’s own but you could absolutely pair with more options for a full breakfast spread. Here’s what I would serve with baked oatmeal:

Fruit Salad with Mint or Easy Fruit Salad Hard Boiled Eggs, Egg and Greens Bowl, Baked Egg Muffins or Sausage Egg Casserole with Veggies Health Nut Smoothie

How to Store Baked Oatmeal

Baked oatmeal stores super well! After allowing to cool, store in an airtight container in the refrigerator for up to 5 days. You can also freeze for longer storage!
