We love us some ‘taters around here. My go-to is my 10-minute microwave baked potatoes (they come out so fluffy and perfect!) but we also love paprika roasted potatoes and easy spice roasted potatoes. For an appetizer, we love my easy cheesy potato skins - with a time-saving hack - and my veggie-stuffed potato skins. Strangely, I don’t really care for French fries. They just don’t call my name. I’d much rather have a baked potato or some roasted potatoes. Maybe I’m a potato purist. We eat potatoes in some none-fry form at least a couple of times a week in my house. And these roasted maple cinnamon sweet potatoes have quickly become a favorite, particularly with the kids. Sweet potatoes are naturally sweet, of course, but when you slice them and brush them with a little maple syrup, then sprinkle on some cinnamon and roast them? Oh my. Little candy nuggets! But wholesome ones. And I find these sweet potato rounds are somehow more appealing to my kiddos - and easier for them to pick up as well - compared with a diced or cubed version. Plus, they take much less work to prep for the oven than trying to dice them up or make wedges, so I’m good with that too. You can certainly eat these maple cinnamon sweet potatoes with a knife and fork and be civilized about it, but honestly, we just use our hands. I’ll thank my 2-year-old for showing us how to reconnect with our food on a more physical level. Shoot, on any level - he knows how to tackle some food with enthusiasm!
