Grilled shrimp appetizers are perfect for summer entertainment
Summer becomes a whole new ball game when you fire up that grill, don’t you think? 🙂 I feel like summer entertainment begins and ends at the grill and the possibilities are endless and delicious! From BBQ pork ribs (baby back ribs) to Thai chicken skewers (chicken kebabs), LA galbi (Korean BBQ short ribs) and more, there are so many options. Which is why I got this amazing appetizer idea for you guys today, that’ll knock your socks off with how easy and unbelievably tasty is it! And even if you live on the other side of the world and you just stored away your grill for the next 6 months – no worries, these Mango and Grilled Shrimp Appetizers are just as easy on a regular frying pan or grill pan on the stove. After all, it ain’t a party for you guys in Down Under until you throw some shrimp on the barbie, amiright? 🙂
Why I love this appetizer idea
And nothing screams summer louder than mangoes and grilled shrimp. 🙂 Shrimp (or prawns) soaks up flavor readily and cooks quickly. And since these grilled shrimp appetizers are also very easy to prepare, they are perfect for crowds, parties and summer gatherings! And to make it an easy and fresh appetizer idea, I’m using the mango and grilled shrimp as a flavorful topping on crackers. We LOVE TRISCUIT crackers around these parts, and these were truly the perfect pairing! These crackers are delicious on their own, but even better dressed up as sweet or savory party starter recipes. My favorite way to eat them as a snack is with hummus or cream cheese. But then, it’s even special when I top them with something grilled. Perfect as a snack, appetizer or if you’re like me, you could eat enough for a meal! TRISCUIT crackers are the perfect canvas for so many delicious toppings!
How to make these grilled shrimp appetizers
These Asian spiced, grilled shrimps are briefly marinated in Ketjap Manis (a sweet soy sauce), cayenne pepper, garlic and coriander powder and then grilled to perfection for some juicy and wickedly delicious shrimp! And then all you have to do is take your favorite cracker, spread a generous amount of hummus and top it with juicy, flavorful shrimp and thinly cut slices of fresh, sweet mango and chopped herbs. The flavors here are truly phenomenal, they are easy to make, easy to present and look impressive, and you’ve got yourself some fancy appetizers that are perfect for summer entertainment.

A note on the shrimp (prawns) – my husband and I LOVE eating the whole shrimp – tails and all! 🙂 That’s how we eat everything from shrimp curry to shrimp rice bowls, shrimp rice noodles, Szechuan salt and pepper shrimp etc. As you grill the shrimp, the tails crisp up nicely. We grew up eating shrimp with tail on, as did everyone else we knew in that part of the world, but if you don’t like it, simply remove the tails before marinating the shrimp.
