If like me you also love crunchy tasty snacks to enjoy with your evening tea or appetisers to serve on your next party these kidney beans tikki is one of the best. Protein rich kidney beans, quinoa, cashew paste makes them taste rich and super delicious. For making Rajma cutlets in this recipe I used boiled Rajma (Red Kidney Beans). I have used quinoa which not only makes it wholesome but adds a wonderful crispy layer outside which makes it even more delicious. Just the cutlets by itself becomes your full meal, because it’s very filling. You can make smaller bite sized appetisers for your evening tea.

Ingredients
Kidney Beans: Also known as rajma. You can either use dried kidney beans after soaking and boiling it and then mashing them. Or use cooked kidney beans from can after mashing them. Spices & Seasonings: salt, red chilli powder, saffron, cumin powder, coriander powder, cardamom powder, pepper powder Cashew paste Paneer (Indian cottage cheese) Peanut oil - to pan fry
How to make Rajma Tikki
Coming back to Rajma tikki I used here Red kidney beans along with small quantity of little millets, Quinoa, Paneer and Cashew paste. You can make deep-fried or pan-fried cutlets depending upon how healthy you want them, I pan fried them in peanut oil which is a better oil for deep frying as it remains stable even at high temperatures. With all the ingredients that go into this makes it tasty tea time snack, appetiser or a healthy treat to carry in your kids tiffin box. There are so many unique ways to serve it, make a sandwich or burger patty with these or just wrap with some veggies in a wrap for a quick and delicious meal, you will enjoy these cutlets.
Can You Make Them Ahead?
Yes you can make them in advance and store in fridge for 1-2 days. You can cook these delicious party appetisers when you are ready to eat and serve them hot. If you want to make these cutlets several days ahead of party you can freeze them on a tray in single layer first. After 2 hours transfer these veg cutlets in a ziplock bag and store them in freezer for 2-3 months.
How to Fry Frozen Cutlets
When You are ready to serve thaw them on counter for 10 minutes and pan fry them. If you want to make cutlets in Air fryer you do not need to thaw them at all. Straight away place them in preheated air fryer and Air fry at 180C for 10 minutes.
