I know a lot of you are busy with Memorial Day festivities today, so this is a perfect, super-easy little snack that you can whip up on the fly to take care of all your munchy needs during all your barbecue-ing (or movie watching or feelings-eating, whatever role Chex Mix plays in your life.) You’re going to need Rice Chex (or generic equivalent), white chocolate chips, a few juicy limes, and some butter. Place the cereal in a large mixing bowl. In a microwavable mixing bowl or glass measuring cup (I used the 2-cup size), Combine the white chocolate chips, butter, some lime zest… and freshly squeezed lime juice…
Microwave for one minute.Whisk the mixture…
If it’s nice and smooth, you don’t need to heat it anymore, but if you’re having a hard time reaching a smooth, pourable mixture, microwave it for another 30 seconds. When the mixture is smooth, drizzle it over the cereal. Stir quickly to combine and then transfer to a 1 gallon ziploc bag. Add 2 cups powdered sugar. Shake vigorously to combine and equally coat the cereal. Spread the cereal mixture out into a single layer and allow to dry/cool completely, then store in an airtight container. Or just eat it. We all know what I’ll be doing.
Now. Some people in the recipe I adapted this from complain that this isn’t crunchy enough for them. The texture isn’t soggy, but it’s not crispity-crunchity, either, so if that’s what you’re after, when you spread out the cereal, do it on a baking sheet and then bake it for about 40 minutes at 200, stirring occasionally.. I’ve never tried this. This is just what other people do. I don’t really subscribe to things that make eating cereal mixes take longer–if I want to bake something, I’ll bake cookies. But I also realize that no matter how much I think everyone should love Friday Night Lights and appreciate the this Chex Mix just as it is, I also realize everyone is not me and that some people don’t like Kyle Chandler (gasp) and they’d rather have crispy Chex Mix.
