My usual method of making BBQ Jackfruit Pulled “Pork” is cooking it on the stovetop, but it can also be cooked in an Instant Pot! An easy weeknight meal that everyone will love. Serve on buns with extra barbecue sauce and vegan coleslaw.
How to make jackfruit in the Instant Pot
First, drain and rinse the canned jackfruit.
Chop off the center core portion and discard. (You don’t have to do this, but I don’t like the texture of the harder parts, so I cut most of it off.) Place it in the Instant Pot with a cup of water and cook on high for 5 minutes. Then mash it with a potato masher until it looks like this.
Add the barbecue sauce and sauté for a few minutes until warmed through. Serve on buns with shredded cabbage or vegan coleslaw.
