If my homemade samoas and date caramel apple slices had a baby the end result would be this recipe. Crunchy apple slices are topped with a coconut almond butter mixture and drizzled with melted chocolate. apple – use your favorite variety, but Honeycrisp and Pink Lady work super well for this recipe. They’re crisp and sweet, perfect for holding all the delicious toppings. unsweetened shredded coconut – adds that classic samoa cookie flavor. Unsweetened is the way to go as they won’t over power the rest of the flavors with processed sugar. almond or cashew butter – this adds some protein and helps combine the coconut mixture! I personally used almond butter for this recipe, but cashew butter will also work. I’ve found that peanut butter is too strong of a flavor and overpowers these apple slices. maple syrup – just a touch for natural sweetness! chocolate chips – you can’t have the samoas without chocolate! You’ll melt chocolate chips melted with a bit of coconut oil for a delicious drizzle over the top.
How to Store
In the fridge: These treats are best enjoyed right away, but if you have leftovers (which rarely happens in my house!), you can store them in an airtight container in the fridge for up to 2-3 days. The apples may lose a bit of their crunch, but they’ll still be delicious! In the freezer: Want to make them ahead of time? Pop the assembled apple slices in the freezer on a baking sheet, then transfer to a freezer-safe bag. They’ll last up to a month. Just let them thaw for a few minutes before enjoying!
