Why To Make It?

Innovative Breakfast: A creative twist on classic boiled eggs and toast. Quick and Easy: Simple to prepare and perfect for busy mornings. Flavor Packed: Combines creamy egg dressing with crispy, toasted bread and spicy toppings.

Ingredients

Boiled Eggs: Peeled and chopped. Chunk of Unsliced Bread: Croissants or brioche preferred; otherwise, any unsliced bread loaf. Homemade Mayonnaise: For a creamy egg dressing. Salt and Pepper: For seasoning. Chili Flakes: For a spicy kick. Sun Dried Tomatoes: Chopped, for added flavor and texture.

See recipe card for quantities.

Instructions

Prepare the Bread Bowl: Cut a large chunk of unsliced bread and hollow out some of the inside to create a bowl. Toast the bread in an air fryer or oven until crispy. Prepare the Egg Mixture: Separate the egg whites and yolk after peeling the eggs. Chop the egg whites and set it aside. In another bowl, mash the egg yolks with a tablespoon and add mayonnaise, salt and pepper. Now, mix the chopped egg whites with the mashed egg yolks to make the egg mixture.

Assemble the Dish: Layer sliced tomatoes in the bottom of the toasted bread bowl. Then, add the egg mixture into the bread bowl. Add Toppings: Sprinkle chili flakes on top for a spicy kick. Chop up and sprinkle sundried tomatoes over the top. Serve and Enjoy: Serve the Egg Bunny Chow immediately for the best texture and flavor.

Substitutions

Bread: You can use any unsliced bread you have, such as sourdough or whole wheat, if you can’t find croissants or brioche. Mayonnaise: You can substitute with Greek yogurt or avocado mayo for a lighter option. Chili Flakes: You can use paprika or hot sauce if you prefer a milder spice. Sun Dried Tomatoes: It is okay to replace with fresh tomatoes or olives if you prefer.

Variations

Cheese Topping: Add a layer of shredded cheese before serving for extra richness. Vegetarian version: Instead of eggs, stuff paneer with vegetables. Protein Boost: You can add meat of your choice to the egg mixture for additional protein.

Storage

Storing: Best enjoyed fresh, but you can store any leftover egg mixture in the refrigerator for up to 2 days.

How to serve

Breakfast: Serve as a hearty and unique breakfast option. Snack: Perfect for a quick and satisfying snack any time of the day. Brunch: A great addition to a brunch spread, especially when served with a fresh salad or fruit.
