I’ve been going in waves… feeling completely overwhelmed with how much time I’m spending in the kitchen between cooking and dishes while also feeling super inspired to create new recipes that work for our circumstances right now. Lots of pantry staple recipes, of course. But what I’ve really been inspired by lately are healthy recipes that are super simple. So simple that I almost feel silly sharing them, but they are so tasty there’s no way I can keep them from you! Which brings me to these date caramel apple slices. Ridiculously simple (basically just piling yummy ingredients on each other), but the combination of crunchy apple with date caramel, toasted coconut and chocolate is crazy delicious. I obviously had to share this fun creation! Let’s dive in…
5 Simple Ingredients:
apple – you can use any kind of apple you prefer – my fave is Honeycrisp! date caramel – yep, we’re making our own caramel sauce out of dates. It’s super simple and absolutely delicious unsweetened coconut flakes – we’re going to toast these up for extra flavor chocolate chips – I used Lily’s dark chocolate chips, which are sweetened with stevia and lower in sugar coconut oil – this just thins the chocolate out a bit and makes it easier to drizzle
Easy Assembly
If you haven’t made it already, you’ll start by making the date caramel. This sauce is ridiculously tasty and the recipe makes quite a bit because you need the volume in order for your blender or food processor to blend the sauce. That said, you’ll have leftovers (yay!) to use however you like. You can use it as a dip for apples or as a topping for salted caramel oatmeal or in my samoa baked oatmeal! If you have kids around the house that want to help you make these, here are some tips:
Older kids that feel comfortable and safe using the stovetop can be in charge of toasting the coconut flakes. Add the flakes to a saucepan or skillet and heat over medium-low heat for 3-6 minutes. Make sure they stir constantly so the flakes don’t burn! Oder kids can also help with cutting the apple into slices, otherwise that can be the parents job.
For making the hole in the center of the apple. I like using a melon baller, but you can also use an apple corer or even a spoon. Use a knife or spatula to spread date caramel onto each apple circle. Have your kids sprinkle the toasted coconut on top of the caramel. Lastly melt the chocolate chips and coconut oil in a small bowl in the microwave. Drizzle the chocolate mixture across the coconut and voila! Snack is served.
