Sometimes we all need desserts that look fancy enough to serve to your guests and simple enough to not to send you running all the way to the gourmet store. This cranberry cobbler is one such dessert that you can make using fresh or frozen cranberries as per season or availability. In India, we hardly get the fresh ones till now, so I made this using frozen cranberries. I got fresh cranberries from US trip last month which I freeze and use. Yes! that’s one thing I do whenever I am traveling I get the berries in bulk and freeze them so that I can use them as per requirement. Living in India we don’t get many berries as fresh as easily as I like them to be but frozen berries and dried berries are available all the year round. Coming back to cranberries, after my last months’ visit to Wisconsin which is a major cranberry region in the USA on invitation from US cranberry Marketing Committee. It is great feeling to visit the harvesting growing region soon after going to California’s walnut harvesting tour in last month of September.  I am always eager to learn and absorb and it is fascinating to see food’s journey from it’s source. Hopefully I will be a small part in this journey to share some knowledge to all my readers which i learned along the way. It was a great opportunity to watch the entire process of growing, harvesting and processing the cranberries. We visited cranberry marsh, cranberries processing unit and cranberry product making facility which helped us to understand this wonderful fruit from close quarters. I will talk about this visit more in a later post and will share few more cranberries recipes. Starting the series with this simple but fancy looking incredible cranberry cobbler recipe. Just like my other recipes, this is one of those unpretentious simples to make cake recipes that take very less time and still taste incredibly delicious. It makes a perfect festive dessert and a winter dessert. You can top warm cherry cobbler with a scoop of vanilla ice-cream or a tablespoon of whipped cream makes it more decadent. PS: When it comes to winter desserts the cobbler is my favorite as much as chocolate brownie is :D. And, since I am totally cranberried at this time so what could be a better cobbler recipe than a cranberry cobbler. SO grab a bag of fresh or frozen cranberries and bake this delightful and elegantly rustic cranberry cobbler. As usual I made few different size servings 🙂 you can make individual servings of cranberry cobbler in pretty ramekins. I used 6 inch cast iron skillet and 2 inch small cast iron ramekins. You can use one 10 inch skillet or a cake pan of your choice. I simply love individual servings of cobbler in ramekins that is super fun and super convenient.
