Happy Monday! I know, not something you usually say about a Monday but this one includes chocolate, so I felt it was OK. Chocolate does that to me. Especially chocolate in the morning… But first, a quick weekend recap: And today, more chocolate! I have a well-documented love of a little chocolate at breakfast (within reason, of course). My healthy chocolate pancakes and my wholesome, warm chocolate breakfast oatmeal are two favorites.
And today, just in time for Valentine’s Day, I’m bringing you THREE ways to fix chocolate overnight oats! So, we don’t really celebrate Valentine’s Day, my husband and I. We don’t even give each other cards. It’s just not our holiday. But with the kids, we’ve been cutting out hearts and making cards and doing crafts and sending Valentine’s to family near and far for weeks. ALL about it! So in terms of a romantic evening, I usually just try and make a semi-nice dinner for the two of us after the kids go to bed and call it a night. #oldmarriedcouple
But this year, we lucked into tickets to go see the Curious Incident of the Dog in Nighttime (thanks Mom and Dad!). I read the book years ago and when I heard it had made it to the stage, I was so intrigued about how it might be performed. And tomorrow night, I’ll find out! It’s not especially romantic, but with two little ones at home, any night out alone is a treat! Speaking of treats, these cold, creamy, chocolate-laced jars are perfect for starting off your Valentine’s Day right! Cause I may not be into the mushy cards, but I can get on board with eating chocolate all day long! These chocolate overnight oats are great for a decadent, special breakfast but they’re sweet enough to enjoy as a ready-to-go dessert. Curl up in front of the fire if it’s chilly and tuck into one of these!
Only question is, which to choose and where to start?! These are the difficult decisions of my life…
Notes on chocolate overnight oats:
I prefer the brownie batter overnight oats jar topped with some fresh fruit - banana slices, diced strawberries or any other berry you have on hand. (And yes, this one is a little similar to the chocolate version of my strawberry overnight oats.) The mini chocolate chips in the brownie batter and oatmeal chocolate chip cookie jars will still be a bit firm if you eat these jars the day after you make them. But if you wait another day, they have softened in the creamy oatmeal mixture. If you’re thinking you might want to warm these up, so did I. I tried it with the oatmeal chocolate chip cookie jar, thinking it might be like a warm cookie kinda taste, but no. It just became liquidy again and the substance/texture wasn’t there. Now I stick to eating them cold, like with all overnight oatmeal, and I am oh so happy about it!
I also like these plastic lids because they’re easier to clean than the metal ones that come with the jars.
