What Kind of Fruit Works in this Recipe?
You can use almost any type of fruit for this easy but stone fruit works especially well. Today I’m using these gorgeous Plumcots and Apriums. Have you heard of those? Both are crosses between plums and apricots and the perfect blend of flavor and texture of both fruits. They’re amazingly flavorful with just the right amount of sweetness.
How to Caramelize Fruit
Slice all your fruit into segments- feel free to mix and match! I’m using both Plumcots and Apriums. This would be delicious with peaches, or you could even use apples and it would taste like an apple pie.
All you need to do is warm up a little butter, brown sugar, cinnamon, and a drizzle of honey. It will quickly warm up and bubble like caramel.
Toss all your fruit in the caramel and let it bubble away for about 5 minutes- it’s that quick! The fruit should be tender but not mushy. It’s kind of like a perfectly cooked fruit pie filling.
Serving Caramelized Stone Fruit
Spoon it straight from the skillet over vanilla ice cream. It tastes just like a pie with a fraction of the effort! The fruit is still the star of the show, but highlighted by the light, sweet sauce.
