5 6 Published May 03, 2022, Updated Jun 29, 2024 One of my favorite ingredients to use in salad dressings is, you guessed it… tahini! It has a mild, nutty flavor that works in a wide variety of recipes. I already have a citrus tahini dressing on the blog, but today I’m sharing a delicious, creamy blueberry tahini dressing. The nuttiness of the tahini pairs perfectly with the natural sweetness of the fresh blueberries. It’s seriously SO good!
Why You’ll Love This Dressing
It has a vibrant hue, rich and creamy texture and just the right amount of sweetness! Blueberries are a superfood! They are rich in antioxidants, vitamins and fiber. It’s super easy to whip up and only requires 6 simple ingredients.
Health Benefits of Blueberries
Blueberries are known as a superfood, a food that is rich in nutrients that are beneficial to your health (ie vitamins, minerals, healthy fats and fiber). Here’s why!
fiber – a 1 cup serving of blueberries contains 3.6 grams of fiber. Fiber is great for gut health, healthy digestion and reduces the risk of chronic disease. vitamins – blueberries contain vitamins C, E, K and B6, which are essential for helping to build a healthy immune system and nervous system, as well as, bone health and proper function of many organs such as the eyes, skin and brain. manganese – an essential mineral needed for normal amino acid, protein, lipid, and carbohydrate metabolism. antioxidants – these plant compounds not only give blueberries their gorgeous color but also may reduce the risk of heart disease, lower blood pressure and help prevent cancer and diabetes. Ingredients Needed
tahini – one of the star ingredients! Tahini is ground sesame seeds… yep, that’s it! The consistency is similar to other nut and seed butter and it has a mild, nutty flavor that is delicious in a variety of recipes. It’s packed with protein, fiber, vitamins and minerals and is one of my favorite ingredients! You’ll find tahini near the other nut and seed butter in the grocery store. You can also make homemade tahini! fresh blueberries – the other star of the show! Gives this dressing a boost of antioxidants and a bright purple color. Plus, it adds a bit of natural sweetness. lemon juice – you need a good amount of lemon juice for this dressing. I recommend using freshly squeezed lemon juice as opposed to the lemon juice you can buy at the store! olive oil – try to use a high-quality olive oil here. Trust me, it will take this dressing to the next level. maple syrup – a hint of natural sweetness to balance the flavors. sea salt – just a pinch to bring all of the flavors together.
How to Serve
I am obsessed with all things tahini so could literally eat this dressing by the spoonful, but it goes well with so many different salads! Here are some ideas:
Spinach Blueberry Salad – the salad I designed this dressing for! It pairs baby spinach with chickpeas, raisins, red onion and roasted sunflower seeds. Strawberry Kale Salad – swap the raspberry vinaigrette for this one Kale Cabbage Salad – brighten up this salad by topping it with this blueberry dressing instead! Blueberry Corn Chicken Salad – amp up the superfoods in this salad with this blueberry dressing.
What to do With Leftover Tahini
If you don’t have a jar of tahini in your pantry, I highly recommend picking one up and keeping it stocked in your pantry at all times! It’s such a versatile ingredient and there are so many ways to use tahini, so don’t worry it won’t go to waste. Here are some of my favorite uses for tahini:
In a sauce: I have a few sauce/dressing recipes that incorporate tahini like my fave garlic tahini dressing, this easy tahini sauce and this citrus tahini dressing. I’ve even made a tahini pasta sauce that is delicious! Make hummus: tahini is a key ingredient in hummus, so you could make your own at home with either this classic hummus or beet hummus recipe. Make a dessert: tahini in dessert? You bet! It adds an amazing flavor and texture to baked goods too. Try these delicious chocolate chip tahini cookies, tahini protein balls or tahini fig bars.
How to Store
I recommend storing leftovers in an airtight container for up to one week in the refrigerator. I use these 8 oz mason jars and these plastic lids for storing so I can easily shake to re-mix the ingredients before serving.
