Sliders are the perfect bite-size nosh and they are crazy versatile. They make a great family-friendly dinner, game day eats or just fun lunch meal. Previously, I’ve shared my baked pesto chicken sliders. The recipe is just 5 ingredients and I love serving them as part of an appetizer spread for something a little more filling and hearty. And my kiddos adore these pepperoni pizza sliders. And have you ever considered sliders for breakfast?! Today, though, we’re making these cheesy baked BBQ chicken sliders. They’re loaded with tangy BBQ coated shredded chicken and then covered in sliced cheese that gets melted down for some gooey, delicious eats! These are perfect for an easy family dinner or for some game day snacking. Everyone will be gobbling them up! I’m also thrilled to be partnering with Cooper® Cheese for this recipe.
They are a deli-style cheese that’s light years beyond what you might be used to. Also, it’s made with milk and hand-selected aged cheese, so we know exactly what we’re getting. It’s creamy, melty and has a really great flavor and texture. You will love this for your grilled cheese, mac and cheese, burgers, sandwiches and more. They have both yellow and white cheese, and I highly recommend both. (For this recipe, I used the Cooper Sharp yellow cheese.) You can slice it, cube it or shred it, so it’s ready for whatever needs you have. My husband even said, “I’m not normally a fan of American cheese, but this is different. I didn’t know this existed!” So you need to try it! (Oh, and you can order it online if it’s not available in your store.)
But back to the recipe at hand. Let’s get to cooking! Now, I’ve got some notes, tips and substitutions coming up below on how to make BBQ chicken sliders. Just tryin’ to be helpful. Notes on making baked BBQ chicken sliders:
You’ll need cooked chicken for this recipe, so please plan accordingly. You can use a rotisserie chicken from the store or some slow cooker shredded chicken or Instant Pot shredded chicken. Feel free to choose your favorite brand of BBQ sauce or make your own. I did large slices of cheese on top of the chicken to melt down over everything. However, you could also shred your Cooper® cheese; you’ll need about 2 cups total. The garlic powder with the melted butter gets brushed over top of these sliders and adds a little extra flavor boost. However, you could skip the garlic powder if you’re not a fan.
Now, we love these sliders “as is.” They’re flavorful and saucy and delicious. (Plus, I have kids that don’t always appreciate the “extras” I add to dishes. ) But there are extras to be added here, if you’d like! Here’s a few ideas to get you thinking.
Add-ins to BBQ chicken sliders:
Sliced red onions Chopped green onions A pickle on each roll Cooked pieces of bacon
And after they are baked, feel free to stuff some coleslaw into the sliders or just serve it alongside. Nom nom nom.
And of course, if you are serving a crowd (when we can safely gather friends and families together in crowds again… one day soon I hope), feel free to double or triple this recipe. How to store leftover sliders:
- The leftover chicken sliders can be stored, covered, in the refrigerator for up to 3 days.
- You can reheat in the microwave, but they will lose any of the crust they developed while baking and will be soft all the way through. (Not a bad thing!)
- Or reheat a few sliders in a toaster oven or regular oven. Just make sure to allow enough time for them to warm through all the way.
