Plus, they cook up quickly. In the time it takes to make coffee and a couple eggs (like my cottage cheese scrambled eggs), your new favorite side dish will also be ready.
potatoes O’Brien – add in some diced red and green bell pepper and yellow onion for fun and flavorful variation. more garlic – love garlic like I do? Leave out the herbs and increase garlic powder to 1/2 teaspoon or add freshly minced garlic. paprika and cayenne pepper – spice it up by adding 1/2 teaspoon paprika and 1/8 teaspoon cayenne pepper, again leaving out the herbs. For more spice you can also top with your favorite hot sauce! cheesy potatoes – add some shredded cheese in the last few minutes of air frying for a cheesy variation.

Big breakfast: Make a full on breakfast platter with eggs, breakfast meat (like sausage, bacon or this vegan tempeh bacon) and potatoes. Tasty breakfast hash: Use these air fryer breakfast potatoes to make a breakfast hash. Burritos: For a fun twist, try adding my taco seasoning to the potatoes before air frying them and stuff them into a breakfast burrito with scrambled eggs, black beans, pico de gallo, avocado, and a little hot sauce. It’s such a simple way to turn these crispy potatoes into an epic breakfast!
