These tasty little granola bites make an ideal snack for kids and adults! They are a lovely little pick-me-up for afternoons when your energy is starting to wane. (Oh wait, that’s most days…) Plus, they are fast and easy. Which is good when my kiddos are up from nap, demanding food and I’m caught without a clue as to what to give them. To make them, you just mix your oats, nuts and dried fruits - and some chocolate chips! - and pour a yummy peanut butter-honey mixture over everything. Roll into balls and voila! Ready to eat immediately. That’s what I’m talkin’ about!
You can sub your favorite nut here - pecans, peanuts, almonds. You could also use almond butter if you have a peanut allergy or if you want to send these to a school where peanut butter isn’t allowed. They make a great addition to a school lunch box or for an after-school snack. These granola bites also travel well to the office and on road trips.
And if you want to just use raisins here instead of the dried blueberries, that’s fine too. It’s all about being easy. I just happen to keep dried blueberries on hand. They are a great lunchbox treat - something different than the regular raisin boxes - and I use them in my blueberry oat cookies and trail mix, too. Whatever you use, these little balls are fruity and sweet with a creamy peanut butter flavor, and they are the perfect portable snack if you’re busy running around all day.
