Summertime living and the food better be easy. And not require an oven. And be on the lighter side. Hmm, that seems demanding, but really, that’s what we want come summer, right? And I’ve got tons of easy, delicious, healthy summer snack recipes to share with you today. Including, of course, some no bake treats. No bake cookie balls and energy bites are great any time of year, but especially handy in the summertime. Popsicles, duh. And even some creamy dips that require just stirring a few ingredients together. Sweet tooth cravings satisfied, no oven needed. We’ve also got a few baked goods that, yes, require the oven, but they make good portable snacks. That’s nice if you’re running around all day from activity to activity, meeting to meeting, or just want something you can grab quickly. Or pack to take on a picnic or to the pool or lake. (And yes, this summer is going to look a lot different as we continue to stay home to stay safe and so much is being cancelled. But here’s to hoping we’ll be able to enjoy some good food with our families at least. ❤️) Also, dips. Dips are good year-round of course, but having some yummy dips on hand in the summer is great for lounging in the backyard, having friends over for some drinks or just enjoying as a quick appetizer before dinner. Also, I’d using only cold dips cause who wants a hot dip on a hot day? In fact, the only hot food here is the southwestern baked egg rolls. They are so good they are worth the heat. We’ve also got a few festive snacks included here that would be perfect for Memorial Day, July 4th and/or Labor Day. (July 4th fruit kabobs, I’m looking at you.)
